About 40 g monounsaturated and 42 g polyunsaturated per 100 g, against 14 g saturated. A little over five parts unsaturated to one — which for a cooking oil is the number that matters most.
Roughly 350 mg of sesamin and 150 mg of sesamolin per 100 g — lignans that no other common cooking oil carries, and black sesame is the variety richest in them. They are also why this keeps: an oil 85 % unsaturated would otherwise turn quickly.
About 42 g per 100 g. Linoleic acid is an essential fatty acid: the body needs it and cannot build it, so all of it has to come from food. One tablespoon of this oil carries close to 6 g.
Cold pressing makes none. Trans fat forms at the deodorising step of refining, where oil is held above 200 °C, and this oil never goes through it. Under 0.2 g per 100 g is the threshold a food has to be below to be called free of it.
